Beth Marie Elkington Stroud, age 41, passed away November 8, 2021, in St. George, Utah from the devastating effects of covid-19. Beth was born December 3, 1979, in Salt Lake City, Utah, the fourth of five daughters of Bob and Joyce Elkington. Beth had a wonderful childhood with good friends, Elkington and Bevan cousins, and especially her four sisters. These beautiful and active sisters adored one-another and formed eternal bonds. They were and are one another’s very best friends. Home with Mom and Dad was a haven of love, fun, and support for each other. Beth’s mother, Joyce, was ill for many years before her passing in 2006, so home life, while full of intense love and glorious fun times, also contained much stress and trauma. Beth and her sisters, Heather, Shannon, Audrey, and Annie loved and rallied around their Mama and supported and loved their Dad. Beth was a happy and active child. She was courageous, strong-willed, and brave. She brought sunshine and spunk into her world. She attended school in Sandy, Utah and graduated from Jordan High School in 1998. Beth married her high school sweetheart, Jonah West Stroud on July 14, 2001. He was the love of her life. Together they were happily engaged in raising daughter, Samara (17), and sons, Jackson (13) and Austin (10). Beth loved being a wife and mother and dedicated her life to her family. She had a love for her many pets, camping and boating with their family and friends, and spending time with her family. Beth and Mara were not only mother and daughter, but they were also the closest of friends. Beth was the boys’ biggest fan as they pursued team sports and motocross racing. Beth had a large circle of friends. Beth was an extraordinary wife and mother. She was bright, energetic, fun, supportive, and afraid of nothing. She recognized that relationships are the most important things in life which made her appreciative and content with everything she had. Her sisters and father could count on frequent calls from Beth “just to say I love you”. Beth seemed to always put the happiness of others first. She loved loudly and with all her heart. She determined and accomplished anything she set out to do with enthusiasm. Beth had many talents, including crafting and sewing, and she learned to do them well. She had many jobs over the years, including veterinary technician, mortgage loan specialist, and real estate agent. While being a full-time wife and mother, she was determined to complete her education. She enrolled at Dixie State University and worked hard to complete a Bachelor of Science degree in Psychology in 2020. She was employed at the time of her death by Crimson Counseling in St. George as a youth counselor. She enjoyed the work and opportunity to make a difference in the lives of those she served. Beth’s passing leaves a big hole in the lives of those she loved. She will be greatly missed. She leaves behind a legacy of genuine love for her precious husband, children, and all the relationships she held dear. Beth was preceded in death by her mother, Joyce Bevan Elkington. Without a doubt, theirs has been a joyous reunion. Also preceded in death by her father-in-law, Don Stroud. She is survived by her husband, Jonah Stroud; children Samara, Jackson, and Austin; her father, Bob (Wendy) Elkington; mother-in-law, Mary Stroud; sisters Heather (Paul) Shepherd, Shannon (Jeff) Ballard, Audrey (Zak) Weideman, and Annie (Daniel) Hyde; brother-in-law, Matt (Jen) Stroud: stepbrothers Casey (Lizzy), Chris, Zach (Caitlin), Matt, Parker (Jordan); and many nieces and nephews who all love their Aunt Bethie. Celebrations of her life will be held in St. George and Sandy in the coming weeks.
